For real this time

So this time I followed the recipe. For the wraps anyway. I didn’t have many of the ingredients for the filling. Who has Chinese chives on hand? (Don’t say “Chinese people”. You’re better than that).

I did have ground pork, so I’m not surprised they tasted pretty close to the commercial ones despite substitutions. Pork is the thing.

So, yes. They came out well. Steamed for 15 minutes in a bamboo steamer, then lightly fried on one side. Perfect-o.

I made an absolute pig of myself and ate twice as many as I intended, and did it in that weird late afternoon time between proper meals. That’s dinner screwed.

What I would do differently next time: I went to a lot of trouble to roll the dough out as thin as possible, because the recipe said to. But in fact the slightly thicker ones worked better and didn’t stick to the steamer as badly.

I have Chinese chives! But I cant find ground pork in any store within 30 miles of home.
I would send you some seed but I don’t know if it is legal or if I can afford postage. If you can find seed, they are easier to grow than regular chives and have pretty flowers. Give Uncle B a project.

Buy wonton or egg roll wrappers for this. Screw making and rolling your own dough…it’s already been done for you! We make a filling with ground pork seasoned with ginger, soy, garlic and a touch of hoisin sauce. We julienne carrots, finely slice book choy, Jerusalem artichoke and, believe it or not, some julienned sweet potatoes. Mix all together, add a shot of red rooster sauce, about a heaping teaspoon of filling mix into the mold, egg wash the edge and crimp. I am deathly allergic to shellfish so no oyster or fish sauce is allowed in my house and we carefully screen the soy sauces. This mix isn’t authentic but is a nice mix that Comes across as Asian but doesn’t put me in the ICU.

Allium tuberosum (Chinese chives). We have them, but then again we are Chinese. Seriously, they easily grow here [a bit more than a mile in altitude, but has to be watered as we are semi-arid] and we have them in our herb garden and seeds on hand to plant if necessary. The seeds are available through Amazon if you cannot find them in your garden shops or in British catalogs.

I agree with using wonton or egg roll wrappers, but YMMV.

If you really wanna make yourself crazy, use pre made pie crust in those (see @Armybrat’s anon comment). Fill with jam mixed with a bit of cream cheese to thicken and bake ’em till they turn golden. Glaze with the standard icing sugar & milk mixture. Move the hell over, Hostess.

I looked for pre-made wonton wrappers. I don’t seem to be able to get them, at least not easily in lockdown. I’m all for easy solutions.

I’ve got regular chives growing out of the cracks in the patio. Invasive species!

Ground pork is a staple at my local butcher. I don’t know why. Uncle B doesn’t seem to know what people use it for.

@Deborah HH, I can’t take credit for those. Stole the idea from Kent Rollins, https://www.youtube.com/watch?v=GR0BsUWJmmo. He uses sourdough crust, but I just use the store bought Pillsbury stuff because easy. I’ve done them both ways, but prefer the baked version.

I tried these once upon a time. The recipe I used said to line the steamer with lettuce to keep them from sticking. It worked for me. Target, Wal-Mart, just about any grocery store carries ground pork. I brown and crumble a pound and divide in small baggies, then freeze. Makes good tacos.

@stoaty…sounds yummy…we love a mid-afternoon nosh.

By btw-try lining the steamer with lettuce leaves, any mild leafy green will do and no more stuck wrappers or buns. Chinese chives aka garlic chives are definitely invasive little buggers. You only need to plant them once. We find them growing in the weirdest places.
