I made a beast of myself. I had three groaning plates of turkey, ham and sausage stuffing, all with loads of really meaty gravy. When the meat coma hit all I could do was plop into an armchair and stare boss-eyed at the wall.

Nothing wrong with a non-turkey Thanksgiving. I had me some nice medium-rare prime rib. Yummy. I couldn’t give up the stuffing, though, so we had to have that. And the green bean casserole. Okay, so I’m not THAT much of a rebel. Hope everyone’s Thanksgiving was awesome.

Funny thing. We went to the market, and there was a man demonstrating pan-frying duck slices. They were *tasty*. Expensive, but tasty.

He sells slices of breast meat, less than an inch thick. You score the skin side, heat the frying pan smoking hot, put it in skin side down. Seven minutes skin side, seven minutes other side. No oil added.

It was about £4 a portion, though. Considering we bought our whole Thanksgiving duck breast for £5.

I love duck. And I’m doing goose for Christmas this year. Heck, I may do goose two or three times for Christmas this year.

I’ve been told goose grease is amazing stuff, and I’m looking to fill a Fry Daddy with the stuff.

Whoo! We did a Christmas goose once and I remember taking out several full dripping-pans of bubbling-hot goosegrease and pouring it into a can so it didn’t start a conflagration. Don’t know if duck is quite so fatty butI hope it’s as toothsome.
