Food always looks so awful in black and white

I bought myself one of these last week. It’s a small plastic rice smusher which, like all silly and fun kitchen gadgets, cost me stupid money. I love it.

I squished the rice a little too forcefully and my, er, rice cubes were a bit hard. But if you don’t, they go to bits in the soy sauce.

Need more practice.

Oh, the ones in the back are smoked salmon and cream cheese. The ones in the front (with the turd-like inclusionis) are tuna and pickle. Thus proving I really don’t ‘get’ sushi.

Are they fattening and are they filling, is what I want to know. Salmon & cream cheese, especially.

Sticky rice holds the sushi together. Try just lightly rinsing the pearl rice and it’ll hold together nicely. I like to sprinkle the cooked rice with some sesame seeds just before forming…adds a little crunch.

Some Veg…tuna, mayo and sweet pickle on toast is a classic Southern combo. Some folks throw in some thinly sliced green onions and others add a few capers. It’s mighty tasty with tomato soup on a cold day.

Long grain rice doesn’t work for sushi. Drizzling some rice vinegar with a bit of sugar dissolved in it helps it stick and adds the echt sushi rice flavour.

For some reason they love sushi here in CR. You can get all the accoutrements in the supermarkets, including sushi rice, nori and that pink preserved root ginger palate cleanser.
