Horseradish!

We took a trip up the coast today to buy fish for supper. Glorious long drive along the English Channel.

Along with the fish, I got a little bucket of shlimps for my lunch. And that means cocktail sauce!

Ketchup, fresh squeezed lemon, fresh grated horseradish, a few other bits and pieces. Honestly delicious.

This is what the horseradish plant looks like, if’n you don’t have one. Grating the root was gnarly. Uncle B was happy because he’s been growing the stuff for years for me and I don’t think I’ve ever used it.

Other than part of a sauce for beef, what can you use the stuff for?

p.s. woo! Fresh horseradish is MUCH hotter!

Fresh horseradish is the ****. You’ll never want to go back to the canned stuff.

That horseradish might work as a substitute for wasabi to go along with your fresh sashimi!

I have a cookbook that is an American History book with recipes thrown in. I bought it in 1976 during the Bicentennial. There is a recipe for Horseradish Butter to serve on steaming hot corn on the cob (my favorite way to eat corn). The recipe dates from 1869. which is the year that Henry J. Heinz first bottled horseradish.

Stir into 1/2 cup softened creamed butter:
2 teaspoons prepared horseradish
1/2 teaspoon dry mustard
1/2 teaspoon salt and a dash of pepper
Top with minced parsley

Another recipe I found was that in Sweden they like to melt butter and stir in finely diced horseradish as a topping for cooked cod. No measurement are given.

I think both sound good.

Creamy horseradish sauce with prime rib is a personal favorite, also on roast beef sandwiches with bbq sauce ala Arby’s. I always thought it was a white radish, like the round root vegetable.

A couple of slices of good heavy rye bread, some honest English Cheddar, a slice of crisp lettuce: mayonnaise, salt, cracked pepper, and not too much but a reasonable amount of that grated horseradish.

A nice light ale is not mandatory, but highly recommended.
